Even though this variety is widespread across Italy, it is not commonly found in Sicily. We bet on this cultivar and started to cultivate it. The outcomes are stunning. We created a well-balanced extra virgin olive oil which presents palatable hints of bitter and spicy notes. It is lighly fruity and defined by clear and enjoyable scents of chicory and artichoke.
We suggest to utilise it as a salad dressing. It expresses its peculiar flavours on fish and traditional fish-based recipes (cod, sea bass, seafood, mussels and clams).
